γ-terpinene

γ-Terpinene (p-Mentha-1,4-diene) is a monoterpene compound with high antioxidant properties suitable for oral consumption. It displays direct radical scavenging abilities and is known to be a potent antinociceptive agent.

γ-Terpinene synthase (EC 4.2.3.114) requires Mg2+ for optimal activity, with Mn2+ being less effective. The reaction involves a 1,2-hydride shift, resulting in the loss of the 5-pro-S hydrogen from geranyl diphosphate. In addition to γ-terpinene, trace amounts of several other monoterpenes are produced.

α-Seco-amyrin synthase (EC 5.4.99.52) requires Mg2+ for its enzymatic activity. This enzyme can also utilize (3R)-linalyl diphosphate. The reaction involves a 1,2-hydride shift, where the 1-pro-S hydrogen of geranyl diphosphate is removed.
