Major Histocompatibility Complex (MHC) is a group of genes that encode cell surface proteins that are critical to the immune system's ability to present antigens.MHC molecules bind to peptide fragments from pathogens and present them on the cell surface where they can be recognised by T-cells thereby initiating an immune response.There are three main classes of MHC molecules: Class I, Class II and Class III.

It is commonly used in the study of egg allergy, and is able to induce strong Th2-type immune responses and IgE antibody production in mice.
