Description
Methional, the primary Strecker degradation product of methionine in foods, participates in oxidative coupling and alkyne hydroacylation reactions, and serves as a biosynthetic precursor for ethylene.
In vivo
Methods: The acute rat oral LD50 (95% confidence interval) of Methional using a 25% (v/v) corn oil dilution was 1.00 (0.59-1.70) ml/kg (male) and 1.68 (0.95-2.99) ml/kg (female); basic acute toxicity, primary irritation, and genotoxicity studies were conducted on Methional.
Results: Most deaths occurred within 1.5 to 4 hours after administration. [1]
