In vitro
Antifreeze Polypeptide 6 (winter flounder) inhibits ice crystal growth by selectively hydrogen bonding the side chains of threonine (Thr), asparagine (Asn), and aspartic acid (Asp) to the hexagonal bipyramidal planes of ice.
